Basil


Basil is best from June 15 - October 15



The most familiar way of preparing basil is in a pesto, with toasted pine nuts, garlic, parmigiano cheese, olive oil, and a little salt, ground in a food processor or with mortar and pestle.  

You could also use basil in a Capprezze Salad. Arrange whole basil leaves, slices of tomatoes, and very fresh mozzarella. Dress the salad with good olive oil and a little salt and pepper.

We like to crush basil and allow it to soak in olive oil for a few days to make basil-flavored olive oil.
