Collards are good for almost the entire growing season, but best after a light frost or two:
June 1 - November 30

A classic american green. Collards are most commonly chopped and stewed for hours with a smoked pork hock. I've made a vegetarian version with chipotle peppers, vegetable stock, and no hock. The collard from Rock Dove don't usually need the hours of stewing that grocery store collards do.
