 Our farm produces a lot of delicious cooking greens and they are featured prominently in the CSA shares.  But most of us (in The US) didn't grow up eating cooked greens at home.  Here's a quick pictorial about the basic preparation of greens (in this case, Swiss Chard).
After washing the greens in cold water, lay them out one at a time on the cutting board.
