Hard Onions

Hard Onions are are good from the day they are harvested: August 7 - November 27

Hard Storage Onions are the classic cooking onion. When a cooked recipe calls for onions this is what it's asking for. I occasionally (right after the first onion harvest) roast them whole and serve them as a side. Especially if I have a really great variety like Rossa Di Milano or Red Wethersfield, which are the red onions I grow. 
    My other onion, Copra, is really good onion that is, arguably, the best storing of all onions.
