Lamb's Quarters

 June 21 - September 15

You may be shocked to see this on our vegetable list, as they are known as a tenacious weed, but the variety we grow has gorgeous coloration, nice big leaves, and a lovely flavor. It makes sense as a crop, being in the same family as spinach. 

Like other braising greens, blanch them first.  They are excellent tossed with sweet corn and dill. They also make a nice soup and, if picked quite young,  a very pretty summer salad.
