Leeks



Leeks are very good from the first harvest to the last: 
July 21 - November 30

One of our most popular vegetables, leeks are most closely associated with French cuisine. It can be used with or instead of onions, and lends its sweeter and mellower onion flavor to the entire dish. 

The most familiar dish featuring Leeks is probably Vichysoisse. Though that dish is a heavily americanized version of the more traditional French Potato and Leek soup:

2 Quarts Boiling Salted Water
1 Pound of Potatoes, peeled and quartered
1 Pound of Leeks, tough green parts removed, cleaned and finely sliced
3 Tbs unsalted butter or olive oil

Cook the vegetables in the water until they fall apart, 30-40 min. Remove from heat. Stir in the butter or oil and serve.
Serves 4-6 people.
