Peppers are best from July 21 - October 20
Sweet Peppers, Hot Peppers, and spice peppers. These are some of the best foods, I like both sweet and hot peppers roasted until the skin is blackened and then peeled away.  I often stuff these roasted peppers with goat cheese, garlic, and a little salt, drizzle with olive oil and put them back in the oven until the cheese is melted. I serve these immediately. 

Small hot peppers are often the hottest, I use them sparingly, and grow comparatively few of them... but many of the great American pepper breeds are hot, some of them very hot. Fish, for example, is a truly delicious pepper, but it is incredibly hot and is only really useful as a condiment. It's a difficult situation, as I want to grow the best stuff, but there's no need to have too many hot pepper plants, either varietally or collectively. 

I do like drying and spice peppers though, and, if you've read many of my recipes, you'll see I use dried pepper all of the time... though I was very tempted to lump them in with the herbs, which fits with their use more closely.
