Savoy Cabbage

Savoy Cabbage is best in the fall, even after a couple of light frosts: October 1 - November 30
Better tasting than smooth leaf cabbages, savoy cabbage is good dressed in a vinegary dressing and left to wilt in the fridge for a few hours, providing a more substantial and chewy alternative to lettuce salads. You may also wilt it and serve with fall flavors: roasted or sautéed apples, juniper, pork, etc., or stuff individual leaves with tasty things pinning them closed and steaming them.
