Spinach is best from May 21 - July 1 and October 1 - November 30

This familiar vegetable is best cooked after it grows beyond the salad sized leaves. I use it the same way as Sorrel or Lambs' Quarters. It's also good in omelets, gratins, quiche... almost any way you could use a green. Perhaps the best is simple blanching or sauteing with light dressing.
