Sunchokes (Jerusalem Artichoke)

Sunchokes are good in the fall and in the spring:
October 1 - December 1;
April 1 - June 15

This native vegetable is related to sunflowers and if eaten raw, is comparable to jicama. I often just wash it, shave it thinly on a mandoline, and dress it. It's also good boiled and served with butter, salt and pepper. 

Marchella Hazan puts it to imaginative use in her cookbook 'Marchella says...' which is a personal favorite.
